Be reminded that tonight -- Thursday, June 29th, at 7:00 p.m. -- I’ll be emceeing a beer and food pairing at Caffe Classico, Louisville’s bastion of continental-style coffee. It’s located at 2144 Frankfort Avenue in Louisville.

Owner Tommie Mudd offers elegant Italian-roast espresso, solid café food menu of soups, salads and paninis, short lists of beer (including Duvel and often Chimay) and wine, eclectic evening entertainment on weekends.

The price for 3- to 4-ounce samples of six different beers and accompanying appetizers is only $20. For further information:

III. LAMBIC BY THE GLASS -- AGAIN IN JUNE, 2007.

Our annual "lambic by the glass" promotion was held last Saturday in the Prost special events area, providing attendees the opportunity to taste 16 different spontaneously fermented ales, four ounces at a time.

I'm happy with the results. We went through the equivalent of about 20 bottles (750 ml) of the various lambics, as well as helpings of fries and Carbonnade Flamande (cooked with Corsendonk Christmas Ale, no less).

Here is detailed information on the recipes of NABC's summertime "gruit" ale series, which have been brewed and are maturing:

Artemisia Ale ... brown ale brewed with 80% Simpson's Golden Promise two-row and molasses, and flavored with mugwort (the "dream herb," related to sagebrush and a cousin of wormwood), sweet orange peel and chamomile.

Strathpeffer Heather ... 90% Simpson's Golden Promise two-row and heather flower honey, with heather (i.e., a shrubbery) added throughout the brewing and maturation processes. Gold in color. Named for the town in Scotland where a Pictish eagle is famously carved into a large stone.

Jenever Rye ... 80% Simpson's Golden Promise two-row and rye, with crushed juniper berries in the mash and the hopback. Golden orange.

General business hours:

Sportstime Pizza opens at 11:00 a.m. Monday through Saturday. Rich O’s opens at 3:00 p.m. Monday through Thursday, and at 1:00 p.m. on Friday and Saturday. We are not open on Sunday except during special events. The same food and beer is available at all times in both rooms, so you may have lunch and a beer in the Sportstime Pizza dining area during those hours when Rich O’s isn’t open. The brewery is available for a look-see if one of us is around and we’re not busy.

Rich O's: The front dining rooms at Rich O's are designated as non-smoking areas. The bar area and Red Room are open for smoking (cigarettes, cigars, pipes). We strongly discourage clove cigarettes, which are divisive even among smokers.

Sportstime: Smoking is permitted in the entirety of Sportstime Pizza.

This event currently is being planned in conjunction with the Bistro New Albany, and it will take place at bNA and include a reservation-only multi-course French-themed meal with a fixed price that includes ample portions of Northern French ale: St. Sylvestre Gavroche, Thiriez Blonde, Amber and Extra, Jenlain, Cuvee des Jonquilles (Biere de Garde de L’avesnois), La Choullette de Noel and Les Sans Culottes.

On July 16 prior to the dinner and tasting, there'll be a bicycle ride for those willing. We're calling it the Tour de Garde, or something equally ridiculous.

Coming in July: Bastille Day, French cuisine and Bieres de Garde -- all at Bistro New Albany.

I. 2006 LAMBIC BY THE GLASS: ONE EVENING ONLY, SATURDAY, JUNE 24 AT RICH O'S.

Our third Lambic by the Glass tasting will be held this Saturday, June 24, in the Prost annex (enter at the Rich O’s door, and turn right). I plan on starting the event at 3:00 p.m., and juggling samples until 11:00 p.m.

While this particular paean to Belgian brewing tradition isn’t everyone’s favorite time, those who are hip to lambic definitely will want to be in attendance.

The object remains as before: Comparing and contrasting spontaneously-fermented lambics from Belgium by means of multiple bottles and small (4-oz) pours from Drie Fonteinen, Cantillon, Hanssens and Lindemans.

In 2006, there’ll actually be one draft lambic: Cantillon Gueuze.

In addition, Belgian-themed food will be a part of the tasting this year, and the menu items are coming together as I write. Amy's working on it, and Carbonade Flamande is projected, among other items. As soon as it's settled, I'll post it.

After much thought, I’ve decided not to release an advance list of selections to be tasted on Saturday. The list is largely as it's been in the past, although there’ll be a surprise, and maybe two. I’d rather wing it, pull out a dozen or so representative bottles to start, and see where the attendees and their taste buds take it.

Yes: I’ll definitely be there the entire time to pour and disseminate information. Last year, I scheduled myself to be four places in two days, and this year the calendar was consulted first.

For too many of my customers, Lindemans Framboise is the only Belgian lambic they’ve ever tasted. We keep it on tap year-round and sell 20 liters a week like clockwork.

The Curmudgeon grimaces, but never fails to deposit the filthy lucre.

To be sure, there’s a place in the cosmos of beer styles for sweetened raspberry concoctions that manage to appease the spouse while you savor something, well, a bit more challenging, but in ideal terms this isn’t at all what lambic should be about, as it functions as a classic beer style on a number of worthy levels.

Lambic is joyfully archaic, brewed from a mash of barley and unmalted wheat, hopped with (intentionally) stale hops as preservatives, then transferred after boiling to large, flat, rectangular pans (“cool ships”) for overnight exposure to all the wild yeast the Belgian breeze can muster.

Aging takes place in oak barrels previously used for wine, sherry or port. Unblended lambics are rare, but occasionally found within Belgium, and sometimes exported. Generally, batches of young and old lambic are blended to achieve individual house character, yielding Gueuze.

If fruit is added, as in the cases of local cherries (kriek) or raspberries (framboise or frambozen), a second fermentation occurs. Ideally, no sugar is added. The flavor characteristics of lambic, even with fruit added in the traditional manner, are dry and musty, and often with the tell-tale wild yeast aroma charmingly referred to as “horsehair blanket.” Bottle-conditioning provides effervescence.

In 2004, I became possessed of the notion that my Lindemans drinkers needed to be exposed to the flavors, textures and sheer olfactory jolt to be derived from other lambics, and gently guided beyond their fruity comfort level.

The major obstacle to this intended enlightenment was the price asked for a bottle of Cantillon, Hanssens or Drie Fonteinen, so for the first time ever, we veered away from the usual “festival of draft beer” approach and devoted two evenings to pouring lambic by the glass.

Along with the usual Lindemans flavored lambics, we rounded up a case of Lindemans Cuvee Rene, ten Cantillon styles, three vintages of Drie Fonteinen and three or four Hanssens, with the total coming to 22, and procured rubber wine stopper caps from Old Mill Liquors. Prices were calculated and pricing tiers established. The tasting began ... and after quality control was finished, a few ounces remained for the paying customers.

Now, if we could just lay our hands on a truckload of mussels ...

General business hours:

Sportstime Pizza opens at 11:00 a.m. Monday through Saturday. Rich O’s opens at 3:00 p.m. Monday through Thursday, and at 1:00 p.m. on Friday and Saturday. We are not open on Sunday except during special events. The same food and beer is available at all times in both rooms, so you may have lunch and a beer in the Sportstime Pizza dining area during those hours when Rich O’s isn’t open. The brewery is available for a look-see if one of us is around and we’re not busy.

Rich O's: The front dining rooms at Rich O's are designated as non-smoking areas. The bar area and Red Room are open for smoking (cigarettes, cigars, pipes). We strongly discourage clove cigarettes, which are divisive even among smokers.

Sportstime: Smoking is permitted in the entirety of Sportstime Pizza.

I. LETTER FROM THE PUBLICAN: THE GOOD OLD SUMMERTIME.

After last evening’s showers, it’s a cool and delicious morning with precious little humidity, but when the calendar pages have turned to June, you know it won’t be comfortable much longer.

For a variety of reasons, there’s less pub and pizza trade in summer. School rhythms change and people spend time outdoors, doing yard work, exercising and grilling out. They (and I) also travel. The NABC brew crew will be kept busy all summer working the many festivals that we’ve committed to attending.

I’ve tried as best I can to have the events calendar (see below) updated to reflect the festivals and off-premise occurrences this summer, including the much anticipated French meal and Biere de Garde tasting at Bistro New Albany on July 16.

There’ll still be selected events at Rich O’s, such as the forthcoming Lambic by the Glass tasting, but the on-premise schedule will be light for the next couple of months. I’ve already started researching beers for Lupulin Land (October) and Saturnalia (December). Along with Gravity Head, these showcases get more and more complicated as time passes. It’s never a question of what we can get away with offering during these times, but finding the best beers available for vending.

In closing, have you ever contemplated the meaning of the word “progress,” or by extension, “progressive?”

Progress is about movement, development and improvement – always forward, and never backward. When I reflect on the approaching 14th anniversary of my involvement in the pub, pizza and brewery business, the thing that makes me proudest is the knowledge that when it comes to beer and beer appreciation, all of us have steadily progressed, and as the coordinator of beer operations, it has become ever more challenging for me to stay ahead of the various curves.

Honestly, if there were such a thing as a World Cup for patrons of good beer establishments, I’d bet on our clientele against any other. You know your stuff, and you keep me on my toes. Thanks for being there.

II. ODDS AND ENDS ABOUT BEER AND BEER EVENTS.

On Thursday, June 29, I'll be emceeing a food and beer pairing at Louisville's Caffe Classico: Advance notice: Beer and food pairing with the Curmudgeon at Caffe Classico, June 29.

DaveFest 2006 rolls on, with a vigil being kept as we await the arrival of Dave's two chosen Rogue Ales (Chocolate Stout and Smoke): UPDATED: DaveFest 2006 under way.

As yet, nary a soul at Churchill Downs has returned my messages of inquiry as to why NABC was listed to participate in a festival that I did not agree to do (or, in fact, was ever once contacted about): Churchill Downs Microfest? We'll pass.

NABC's brewer, Jesse Williams, continues preparations for his series of summertime "gruit" ales, including Pictish Heather (with honey), a brew flavored with mugwort, and another with rye and juniper berries.

It's just a few more days until Hoptimus is ready. Although cask season is winding down, there's a bit more cask-conditioned NABC St. Radegund Bitter to be poured, and it will be coming tomorrow.

I. DAVEFEST 2006 BEGINS ON FRIDAY, JUNE 2.

What exactly what is DaveFest 2006?

It’s a question worth considering, because DaveFest 2006 represents a whole new draft beer festival concept for us.

Currently at Rich O’s and Sportstime, we stage three draft beer festivals during the course of the year. Gravity Head is devoted to high-octane “gravity” beers, Lupulin Land to lupulin-laden hoppy beers, Saturnalia to diverse and “festive” cold-weather seasonal beers in the period just before Christmas.

With DaveFest 2006, we inaugurate the first “consumer’s choice” draft beer festival, one that seeks to answer the question: “What would your ideal draft lineup look like?”

This fun idea arose from a conversation between loyal customer Dave Siltz and myself, and here are the rough guidelines (in Dave’s own words):

The rules are these:

Six taps will be provided for beers of my choosing, but I should specify at least ten beers so that alternates are available if any of my main selections cannot be procured.

I need to choose beers that Roger can actually get, so no Alaskan Amber and no Alaskan Smoked Porter or anything else that he can't get in a keg.

Some beers are always on anyway, like Guinness, so I needn't bother specifying them.

I immediately thought it would be a fine thing to try and do, perhaps even more so because Dave’s taste preferences run across the board and embrace stylistic territories that aren’t always represented in our yearly promotions, i.e., he’s neither a “gravity” nor a “hop” head.

Here is the combined list he submitted, including alternates. I was able to get many, but not all, and two are coming, but late.


Note: Dave assumed I wouldn’t tap a keg of Newcastle Brown for the occasion, but he’s wrong. I will. What the hell.

Perhaps in the future, we might entertain submissions from other customers in a yet to be determined sweepstakes format, with the grand prize being his or her own draft beer festival. First, we’ll see how this one goes.

II. LAMBIC BY THE GLASS IS JUNE 24; BASTILLE DAY/BIERES DE GARDE FETE AT bNA FOLLOWS ON JULY 16.

Later in June, a revamped lambic celebration will take place in Prost, our special events room by Rich O's:

Here's the exciting new twist: This July event currently is being planned in conjunction with the Bistro New Albany, and it will take place at bNA and include a reservation-only multi-course French-themed meal. There will be a fixed price that includes ale.

Chef Dave Clancy is mulling menu possibilities, and I'm looking at a stock of Northern French ales that includes St. Sylvestre Gavroche, Thiriez Blonde, Amber and Extra, Jenlain, Cuvee des Jonquilles (Biere de Garde de L’avesnois), La Choullette de Noel and Les Sans Culottes.

The tentative date is Sunday, July 16, and prior to the dinner and tasting, there'll be a bicycle ride for those willing. We're calling it the Tour de Sans Culottes, or something equally ridiculous. More later.

III. NABC BREWERY NEWS: GRUIT ALE SERIES ON THE DRAWING BOARD.

Jesse's got a series of summertime "gruit" ales on the way, including Pictish Heather (with honey) brew and recipes that use mugwort and juniper berries. They're in the developmental stage, and there'll be more information coming soon.

Calm down ... the next batch of Hoptimus has been brewed and will be ready in ten or twelve days.

Meanwhile, to keep our hopheads distracted, the yearly June allotment of Stone Ruination Ale goes on tap tomorrow. I know, it's just not the same ...

The next summer fest is Brew-Ha-Ha in Indianapolis on Saturday, June 24.

IV. FROM THE HAND PULL: LAST OF THE GALE'S PRIZE OLD ALE, WITH BOB'S OLD 15-B AND ST. RADEGUND ON THE WAY.

Cask season is winding down, but a few firkins are yet to be tapped:

On the hand pull now: The last pours of the Gale’s Prize Old Ale (England; 2005), 9% abv (firkin) -- quite likely the final POA we'll see owing to the brewery being bought out and "rationalized."

Afterward: Five gallons of Bob's Old 15-B has been aged for three months in the wooden pin that previously held JW Lees Vintage Harvest Ale (Willoughby's Crusted Port conditioned). Whether any of this will come through in the Porter, we'll not know until Friday morning, June 2, when it is tapped. Also, there is a bit more cask-conditioned NABC St. Radegund Bitter.

At the bottled beer garage sale earlier in May, I moved out the admittedly scant leftovers from the past and made room for new rotating selections.

But not all the Bell’s Wheat Project ales went out the door. These are being closed out at $2.00 a bottle. See Bell’s Wheat Project intro/closeout at Rich O's for information on each of the five wheat ales in this series.

Allagash Curieux (750 ml; 9.5% – 10.5% abv)
I had the privilege of tasting an early version of this Belgian-style ale, which is aged for two months in Jim Beam barrels, while visiting Portland, Maine, in early 2005. Finally some of it has come our way.

BBC Professor Gesser's Mind Numbing Ale (750 ml; 7.1% abv)
BBC Homewrecker Double IPA (750 ml; circa 10% abv)
Formerly sold as Ultra (on draft). I know these bottlings are from the pub on Shelbyville Road, and the recipes are pub brewer Jerry Gnagy’s. Beyond that, I’m not sure about the genus of the program, although I’m guessing that BBC Shelbyville Road is free to sell bottled beers that aren’t the same as the line offered by the production brewery downtown. I’ve sampled the Homewrecker, and it is spritzy, lethal, and veering toward a barley wine.

Dogfish Head Golden Shower Imperial Pilsner (750 ml; 9% abv)
This “extreme” makeover is one of the better executed, sans adjuncts, and including all noble hops.

Founders Curmudgeon Old Ale (12 oz; 9.3% abv)
Founders Imperial Stout (12 oz; 10% abv)
Founders Kentucky Breakfast Stout (12 oz; 10% abv)
A triumvirate of excellent seasonal specialties from a brewery the seemingly can do no wrong.

Stone Imperial Stout
Stone’s is one of my favorite versions of one of my favorite styles. Black liquid sipping delight irrespective of the weather.

Three Floyds Rabbid Rabbit Saison (22 oz; 7.4% abv)
It’s been too long since we had Rabbid Rabbit on tap, and this is a measure of how difficult it has become to score those few specialty items that Three Floyds makes available for general distribution.

IMPORTS

Brouwerij De Glazen Toren (Belgium)
Jan de Lichte (750 ml; 7.5% abv)
Listed as “Imperial Wit,” or to me, another way of saying “Grand Cru” in the Belgian sense of the usage. A higher gravity spiced White.

Ondineke (750 ml; 8.5% abv)
Tripel from Aalst. No spices are used.

Houblon Chouffe Dobbelen IPA Tripel
Chouffe suspended its seasonal specialty program a few years back, but has returned in a big way with this much-anticipated hybrid. What is it like? Just remember that the magic hop cone is rendered “houblon” in French, and it all makes sense.

Le Baladin Wayan (Italy; 750 ml; 5.8%)
Nothing has been as surprising, and gratifying, than the recent arrivals of high-quality Italian microbrews. From the maker of Super Baladin and Nora comes another: Wayan, a clean Saison true to the Belgian style.

VIII. BISTRO NEW ALBANY UNVEILS FULL DINNER MENU ON THURSDAY, JUNE 1.

Bistro New Albany's much anticipated evening fine-dining menu is being inaugurated tonight. I'm hoping to make it by Saturday for a sample.

Here are bNA’s current hours, which are subject to alteration as the Daves learn more about business patterns downtown.

Lunch: 11:00 a.m. to 3:00 p.m., Monday through Saturday.

Dinner: 5:00 p.m. to 9:00 p.m. Wednesday and Thursday; 5:00 p.m. to 10:00 p.m. Friday and Saturday.

Closed: Monday and Tuesday evenings, and Sunday (except for special events).

At bNA, at least four NABC drafts join two BBC ales and two to four rotating guest taps. Food is casual bistro fare with numerous fine-dining touches generally absent from the local dining scene. The courtyard ambience is suburb, and reviews so far have been overwhelmingly positive.

IX. EVENTS, HOURS AND RELATED FACTS.

General business hours:

Sportstime Pizza opens at 11:00 a.m. Monday through Saturday. Rich O’s opens at 3:00 p.m. Monday through Thursday, and at 1:00 p.m. on Friday and Saturday. We are not open on Sunday except during special events. The same food and beer is available at all times in both rooms, so you may have lunch and a beer in the Sportstime Pizza dining area during those hours when Rich O’s isn’t open. The brewery is available for a look-see if one of us is around and we’re not busy.

Rich O's: The front dining rooms at Rich O's are designated as non-smoking areas. The bar area and Red Room are open for smoking (cigarettes, cigars, pipes). We strongly discourage clove cigarettes, which are divisive even among smokers.

Sportstime: Smoking is permitted in the entirety of Sportstime Pizza.
